We are sparing protein molecules from being use in a certain process, in this case we are keeping the from being use for muscle energy. As you have read carbohydrates are the preferred source of energy for the human body, but when glycogen(form of carbs used by your muscles for fuel) runs out your still working out muscle turn to their own amino acid pools for that required energy. This in turn put your body into a catabolic state to where it is now feeding off of itself.
